Sweet Chilli Chicken Thighs

This dish looks so good and tastes even better, the fried chicken is matched perfectly with the heat of the sweet chilli sauce.This is perfect with skin on fries and a peppered kidney bean salad. Author: The Modern Gastronomer
Ingredients
- 1 Eggs
- 8 Skinless chicken thighs
- 500 ml Buttermilk
- 200g Self raising flour
- 500ml butter milk
- 1tsp Chilli powder
- 2 Chicken stock cubes
- 2tsp Ginger powder
- 2tsp Garlic powder
- 3tsp Mixed herbs
- 1 1/2cup of water
- 1cup of honey
- 5g Chopped ginger
- 2tsp plain flour
- 4tsp finely chopped garlic
- 1 chilli pepper
- 1/2 cup of cider vinegar
Directions
- Whisk the egg, buttermilk and about half of your seasoning in a large bowl.Then place the chicken into this bowl to marinate for 2-4 hours. The longer you allow the chicken to marinate the more flavour there would be.
- For the chicken coating; mix the flour with the other half of your seasoning
- After the chicken has marinated, drain the marinade into a separate bowl.
- Cover the chicken with the flour mix
- Place the chicken back into the marinade then recoat with flour. For the coating it's; Flour-marinade-flour.
- Heat oil in a large pot till it reaches 175c then fry 2 chicken thighs at a time. 4 minutes on the first side then turn it to fry for 2-3 minutes on the other side. It should be golden
- Allow the chicken to drain on a wire rack. The fried chicken is done, now to make the sweet chilli sauce.
- For the sweet chilli sauce combine the honey, water and cider vinegar into a large pan.
- Finely chop the garlic, ginger and chilli. Add this to the pan and bring it to a simmer.
- Add the plain flour whilst stirring. allow the sauce to heat for a further 3 minutes till it has thickend
- Arrange the chicken in the pan and allow it to simmer on the first side for for about 5 minutes
- Flip the chicken and let it simmer for a further 3 minutes.
- All done serve this with skin on fries and a salad.
